A wonderful recipe for Fall or Winter
I have to brag on myself a little - I'm the queen of "use what you have." Actually, most Virgo women are. It's just how we're wired.
Sometimes, cooking is no exception. I might not have a lot of time, not feel like "cooking" at all, or just not be that hungry.
In any of those scenarios, I have gotten really good at "using what I have." This soup is no exception. I was feeling like a soup, but wasn't sure how to make it happen, so I just started putting things together, knowing a little about what things mesh well together and would taste good.
Broccoli Broth Soup was born.
This recipe is my own and isn't taken from anywhere. I love recipes like this that I just improvise!!
So without further adieu, let me introduce you to this 5-10 minute recipe for Broccoli Broth Soup I made for dinner tonight! It's getting colder here in Dallas finally.....so this soup would be perfect for a movie night in or a quick, warm dinner if you don't feel like cooking.

Organic Vegetable Broth
Organic Free Range Chicken Broth
Adobo Lemon Pepper Seasoning
White Corn Tortillas
1 Tortilla torn into med. Size pieces
Organic Broccoli Florets
Chick Peas (Garbanzo Beans)
Sprinkle on Top

I just combined the veggie broth, chicken broth, seasonings, tortilla strips, broccoli florets, and butter together and brought these to a boil. Let it boil for 5-6 minutes at least. I also added a tablespoon of Corn Starch as it started boiling to thicken the consistency a little.
Once it boils for a little bit, add the avocado, sour cream, and cheese to the top - all optional.
Virtually everything in this recipe is optional. You could use as much or little broth as you want, different kinds of broth, more or less salty seasonings, different veggies - the opportunities are endless.
