Black Bean & Corn Burger with Cheddar
Finally, a recipe without broccoli, T! Can we all say amen? LOL
Here’s the scoop: recently, I’ve gotten tired of my own dull, boring same ole same ole recipes. I used to be way more creative in the kitchen, but let’s face it – living on my own, I sometimes get in a rut. I’m a great cook, but cooking only for myself day in and day out gets old, and I get lazy.
So I packed myself up and drove to Central Market (my favorite grocery store) to get some new stuff. I started with 8 veggie burger recipes I want to try in the coming weeks and sought to make them my own.
All the recipes on my site are meatless, but can always be modified to have meat if you’re a meat eater!
I’m sharing one of them with you here today, because it’s really one of the easiest of the 8 to make.
This black bean and corn veggie burger recipe is delicious, and I’ve paired it with extra avocado with a dash of salt & pepper on the side and Exotic Vegetable Chips Mediterranean Blend from Central Market. They are DIVINE and are also very good dipped in any other kind of dip or hummus!!!
YIELD: 6 Servings| PREP TIME: 5 minutes | COOK/BAKE TIME: 6 minutes | TOTAL TIME: 11 minutes
- 15 oz black bean, 1 can, drained, rinsed
- ½ cup brown rice, cooked
- 1 cup corn
- ½ teaspoon garlic powder
- 1 teaspoon chili powder
- 1 egg
- salt, to taste
- black pepper, to taste
- ⅓ cup seasoned bread crumbs (I add a bit of paprika & oregano to regular bread crumbs)
- canola oil
- Organic shredded cheddar
Optional: Tomato, red onion, pico de gallo, pepperjack or another type of cheese
DIRECTIONS & PREP:
- In a skillet pan, heat a small amount of oil over medium heat. Start this to heating while you prep the veggie burgers.
- In a mixing bowl, add the black beans, rice, corn, seasonings, and egg. Using a potato masher, mash the ingredients until thoroughly mixed together.
- Once mashed, add the bread crumbs and mix.
- Take a quarter of the mixture and shape it into a patty using your hands. Repeat with the remaining mixture to create six patties.
- Add the patties to the heated oil and pan and cook for 4-6 minutes, flip, top with a slice of your choice of cheese or use shredded cheddar, and cook for another 4-5 minutes on that side, which is my favorite variation. I feel like shredded cheddar is stronger sometimes than the sliced.
- Place your patties on buns, and top with sliced tomato, red onion, avocado, and fresh salsa (or any other toppings you like such as mushrooms or ranch dressing, even).
Super simple! Just like that, you’ve got a simple tasty black bean & corn veggie burger. And make no mistake, it’s GOOD.
These veggie chips are absolutely scrumptious with it! But you can also do homemade sweet potato fries with sweet potatoes in a pan or another kind of chip or even mashed taters. 🙂 Get busy!
PS – depending on your family size, you might be able to eat on these for days, since the recipe makes 6. I will eat mine on buns, by themselves with ketchup or ranch dressing. There’s so many variations. Enjoy!
